The Kitchen Manager is the culinary operations team member responsible for all operational, administrative, and financial results related to the food program.
This leader oversees kitchen operations, staffing, culinary training, menu development, recipe costing, expense management, food safety, physical safety, and special events requiring culinary components.
The Kitchen Manager plays a key support role to the Chef in ensuring the success of the culinary program, while also being a supportive partner with the food service team.
The Kitchen Manager also supports the larger Ranch goals of creating a successful business venture with a positive workplace culture and satisfied guest experiences.
Ghost Ranch is a remote, year-round, education and retreat center located in the high desert of northern New Mexico, guided by values of sustainability, inclusivity, equity, creativity, and spirituality.
Overnight guests come from near and far to enjoy a wide variety of programs and retreats.
Kitchen staff prepare three meals a day for them, served in our large dining hall, buffet-style.
Ghost Ranch is also a destination for many day visitors, many of whom purchase box lunches at the Welcome Center.
Culinary or bachelor’s degree, or equivalent experience
3–5 years of culinary leadership experience
3+ years of high volume / high quality kitchen management experience
Must be able to work in a fast-paced environment
ServSafe certified
Able to lift up to 40 lbs safely
Essential Job Responsibilities:
Set an example of reliable attendance on all scheduled work days.
Lead, train & mentor all kitchen staff to consistently execute culinary responsibilities to desired standards, and to create a strong team relationship.
Create and foster an environment of creativity, constant learning, and experimentation.
Assist in managing all kitchen operations, including catering and special events.
Follow weekly schedules based on forecasted business, maintaining a proper balance of labor vs revenue.
Engage in positive daily menu meetings / line-ups representing the culinary team and food program with frequent sampling, product knowledge.
Follow menu cards for all menu items, creating consistency in production and food cost adherence; work with the management team to keep waste to an absolute minimum.
Promote and maintain impeccable back-of-house cleanliness standards that meet local health code at all times.
Physical Demands of Position Include:
Must be able to move, lift, carry, push, pull, and place objects weighing less than or equal to 40 pounds without assistance.
Reach overhead and below the knees, including bending, twisting, pulling, and stooping.
Stand, sit, or walk for an extended period of time.
75% of the time will be spent standing, reaching, talking, hearing, tasting, and smelling.
20% of the time may be spent walking, climbing/balancing.
5% of the time will be sitting and/or being exposed to the outdoors including winter weather conditions.
Accountability:
Reports to the Chef/Food Services Manager.

Compensation Package:
The Kitchen Manager is expected to reside on the Ranch, and comfortable, rustic housing is provided to the individual in the role.
This position is classified as a full-time exempt position with a compensation of $45,000 per year, which includes this housing and all meals.
